Gluten Free Coconut Banana Muffins

Happy Earth Day! I wanted to celebrate with healthy and delicious muffins made with all natural ingredients. Treat your body right!

Recipe:

Yields 20

3 eggs at room temperature
1 tbsp vanilla extract
3/4 cups brown sugar
1/2 cup coconut oil, melted
3 ripe bananas
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tbsp apple cider vinegar
1 cup Bob’s Red Mill Coconut Flour
1 1/2 cups Bob’s Red Mill Gluten Free flour
1/2 cup Bob’s Red Mill Shredded Coconut, toasted

Preheat your oven to 400 degrees. Line 20 muffin tins with liners. In a medium sized bowl with an electric mixture beat the eggs, coconut oil, and sugar. Add the bananas and mix until well combined. Add the remaining ingredients and mix until just combined not over mixed.

Topping (optional)

Sprinkle toasted coconut and dairy free mini chocolate chips on top of each muffin before baking.

Bake at 400 degrees for 20 minutes.
