The Perfect Peach Pie

Pie Crust:
3 cups flour
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 teaspoon vanilla extract
1 tablespoon sugar
1 cup butter cut into pieces.
6-8 tablespoons ice water
Combine the flour, sugar, salt, and cinnamon.
Add the chunks of butter and beat until the texture is crumbly.
Add the vanilla and ice water.
Mix with your hands to form dough into two discs.
Roll out one disc about 1/4 inch thick on a floured surface and line a pie dish.
Press down the edges.
Peach Pie Filling:
1 egg, beaten
8 peaches, peeled and sliced thin
1 cup cherries pitted and sliced thin
2 tablespoons lemon juice
3/4 cups flour
1 cup sugar
1/2 teaspoon cinnamon
1/2 teaspoon salt
2 tablespoons butter
Preheat the oven to 450 degrees.
Brush the pie shell the beaten egg with a pastry brush.
Mix the sugar, cinnamon, and salt.
Add the peaches, cherries, and lemon to the mix.
Stir until combined.
Pour into pie shell.
Roll our the other disc of dough, and cut strips to make a lattice top.
Top with butter, and brush with egg.
Bake for 45 minutes.
