Cherry Cheese Love Pockets (aka Empanadas)

I am a sucker for breakfast in bed. I crave it every weekend. Who doesn’t like to be served while laying between Egyptian cotton and pillows of down feathers in lace panties? I’m single so this never happens, but I want to make your dreams come true, so make these delightful little love pockets for bae and serve them in bed. The aphrodisiacs in this recipe are cinnamon and cherries so bae will totally be in the mood to serve you back wink wink!

Cherry Cheese Empanadas

Crust:

2 cups flour
1 cup unsalted butter, chilled
1 tablespoon sugar
1 teaspoon vanilla extract
1 teaspoon salt
1/2 teaspoon cinnamon
2-3 Tablespoons of water

In a bowl fitted to an electric mixer combine the dry ingredients. Cut the butter into cubes and add to the mix. Beat until the mix is crumbly. Add the vanilla then the water one tablespoon at a time. When the dough forms shape into a disc, wrap in plastic and refrigerate for at least one hour. Prepare your filling.

Cherry Cheese Filling:

8 oz cream cheese
5 tablespoons butter
1 teaspoon vanilla
2 cups powdered sugar
1 cup cherry preserves

In a bowl fitted to an electric mixer beat the cream cheese and butter until smooth. Add the vanilla and powdered sugar one cup at a time. Fold in the cherry preserves, just to combine, but don’t over mix. More of a swirl will really allow you to taste the flavors of the cheese and cherries.

Preheat your oven to 375 degrees. Line a baking sheet with parchment paper. When your dough has chilled roll it out on a floured surface about a 1/2 inch thick. Cut 3 inch circles with a cookie cutter. I used a glass cup to make my circles. Place about a tablespoon of filling on half of the dough. Fold the other half over and seal the edges using a fork to create a pressed crimp. You can make these as big or as small as you like just adjust the filling. You don’t want it to pour out once you try to seal it. Line your love pockets on the baking sheet and brush with egg wash.

Egg Wash:

1 egg
2 tablespoons water
Sugar

Mix the egg and water in a small bowl. Brush the wash onto each love pocket then sprinkle with sugar. This will give your empanadas a shiny, golden brown color. Bake for about 20 minutes. The bottoms should be golden brown. These are so orgasmic served warm to your lover in bed with a cup of coffee. Trust me!
