Chocolate Twix Cupcakes

Happy Friday, my sexy baker, sweet lover friends! I was a very naughty girl this week. I had an order for cupcakes that would be given to kids on a camping trip, so I thought I would have some fun by using candy! I typically make all of my recipes from scratch, but I know Most people are looking for quick, easy, and delicious so I included two versions: one for those that have all the time, and one for those that have no time! Cheating is fun when it doesn’t hurt feelings!

Semi Homemade Chocolate Twix Recipe:

1 box devil’s food cake mix (refer to the back of the box for water, oil, and egg proportions)
1 box of instant chocolate pudding mix
1 Bag of Twix minis (you will have some left over, save them for topping)
2 Containers of chocolate frosting
1 jar of caramel sauce

Preheat your oven to 350 degrees. Line 24 muffin tins with liners. In a medium bowl fitted to an electric mixer beat the cake mix, eggs, water, oil, and pudding mix. Once the batter is smooth and lump-less pour into your muffin tins about half way full. Unwrap the twix minis and submerge them into the dark chocolate batter until they are covered. Bake for 15-20 minutes.

Once the cupcakes are cooked and cooled pipe a hefty blob of chocolate frosting onto each. Chop up the remaining Twix minis to sprinkle on top of the frosting. With a spoon drizzle caramel sauce on top of all that. Ta da! Easy peasy Semi homemade chocolate Twix cupcakes! They really taste heavenly.

Here is the recipe from scratch, except the Twix. I’m not that much of an over achiever. I bought those 🙂

 Chocolate Cupcakes:

2 cups cake flour
2 cups sugar
Âľ cups cocoa powder
1 package instant chocolate pudding mix
2 teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
1 cup buttermilk
½ cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 cup coffee (luke warm, not hot)
1 bag of Twix minis (save extra for topping)

Preheat oven to 350 degrees.Line 24 cupcake tins with liners. In an electric bowl fitted with a paddle attachment combine the wet ingredients except the coffee. In another bowl combine the dry ingredients. Mix the dry into the wet slowly incorporating the coffee . Beat just until combined. Pour into muffin tins about half way full. Sink a Twix mini into the center until it is completely covered. Bake 15-20 minutes. Allow to cool before frosting.

Chocolate Buttercream

1/2 cup butter
1 cup shortening
3 cups powdered sugar
1 teaspoon vanilla
8 oz bakers chocolate melted

Melt chocolate over a double broiler. Set aside to cool to room temp. Beat shortening and butter until smooth and fluffy. Add the powdered sugar one cup at a time alternating with the vanilla. Finally add the chocolate and beat just until combined. Pipe that goodness onto your cakes. Chop your remaining Twix minis and sprinkle them on top of the frosting. Prepare the Caramel sauce. I used Ree Drummond’s recipe here. Drizzle this orgasmic sauce on top of your cakes with a spoon. O.M.G. I had a cup left over that I have been picking at. it’s a problem.
