Gluten-Free Coconut Protein Muffins

Happy Monday! I have had an amazing, but unhealthy time of vacationing in Jamaica and working on set the last couple weeks. June 1st sounded like a great date to clean up my act so I’m going gluten-free! I am also committing to NO EATING OUT (unless its is for an occasion that I cannot work around) for the rest of the year!  To kick my diet off right I made these yummy Protein muffins! Enjoy!

Coconut Protein Muffins

1 banana
2 tablespoon coconut sugar
2 tablespoons agave
2 eggs
1/4 cup coconut oil
1 tablespoon vanilla
1 tsp apple cider vinegar
1/4 cup coconut milk
1/3 cup vanilla protein powder (I used About Time)
1/2 coconut flour
1/3 unsweetened shredded coconut
1 tsp baking soda
1/2 tsp baking powder
More shredded coconut for topping

Preheat oven to 350 degrees. Line a muffin tin. This recipe makes about 8. Combine all the wet ingredients in a medium bowl with an electric mixer. In a separate bowl mix all the dry ingredients. When they are well combined add them to the wet bowl and mix just enough to incorporate. Fill the muffin tins almost full, and sprinkle the tops with shredded coconut. Bake for about 20 minutes. They tend to dry out when over cooked, so use the toothpick test. Hope you love them as much as my belly does!
