Healthy Protein Balls

My sweet nunna (grandma in Maltese) and grandpa are driving from Sacramento to LA to visit me today! I wanted to bake them a sweet treat, but they are doing so well on their Weight Watchers program I didn’t want to derail them. I came up with these super healthy, clean protein balls.

Protein Balls

1 can chickpeas rinsed and puréed with 10 squirts liquid stevia and 2 Tbsp water
1/2 cup vanilla protein powder (I used About Time)1/4 tsp vanilla extract
1/4 teaspoon almond extract
1/4 tsp salt
1/3 cup coconut flour
1/2 cup chopped pecans

Blend all ingredients together. Roll the dough into 1-2 inch balls and freeze for 20 minutes.

Heat 10 oz of chocolate (I used Enjoy Life Foods mini chips) and dip your balls until completed coated. Cool on parchment paper.
