Kiss Me, I’m Irish Car Bombed!

I love St. Patrick’s Day because my Grandpa is Irish and we always celebrate with the best spread of traditional food. When I celebrated in college I was introduced to the Irish Car bomb: a shot of Jameson whiskey topped with Bailey’s Irish Cream, dropped into a glass of cold Guinness draft, then swallowed before the cream curdled. So yummy! Naturally I had to capture these flavors into a cupcake, because that’s how I do! The base is a chocolate Guinness cake, the filling is a Jameson ganache, and the topping is Bailey’s whipped cream! You can see a tutorial for my chocolate ganache here. Now go bake these babies!

Chocolate Guinness Cake

2 cups cake flour
2 cups sugar
¾ cups cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
1 cup buttermilk
½ cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 cup Guinness

Preheat oven to 350 degrees.Line 24 cupcake tins with liners. I chose gold! In an electric bowl fitted with a paddle attachment combine the wet ingredients except the beer. In another bowl combine the dry ingredients. Mix the dry into the wet slowly incorporating the beer. Beat just until combined. Bake 15-20 minutes. Allow to cool on a wire rack. Once cooled cut out the centers like you are coring an apple. This hole will be filled with the ganache!

Jameson Ganache

8 ounces bittersweet chocolate
2/3 cup heavy cream
2 tablespoons butter, at room temperature
1 tablesppon Jameson Whiskey

Heat the heavy cream in a saucepan. Just before it boils remove from heat and pour over chocolate that is in a separate bowl. Once the cream melts the chocolate stir to combine. Add the butter and whiskey. Allow to cool. Once cooled and thickened pipe or spoon into the center of your cupcakes.

Bailey’s Whipped Cream

3 cups heavy whipping cream
1/3 cup powdered sugar
1 teaspoon vanilla extract
2 Tablespoons Bailey’s Irish Cream Liqueur

Beat all ingredients until fluffy stiff peaks form. Place whipped cream into a piping bag and pipe on to your cooled, ganache-filled cupcakes.

I cut paper straws to stick in the whipped cream for decoration. It gives the impression that it is a drink. Get it?! One bite will hit you with a ton of flavor! Enjoy, and please eat responsibly 🙂
