Cake poppin’ is so 2013, get your pie poppin’ on, already! These are great because you can use any pie recipe that you love and just shove a stick in it! I know this intro is a little aggressive, but pie excites me!
Crust
3/4 cups all purpose flour
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
5 tablespoons unsalted butter
2 tablespoons ice water
In a bowl fitted to an electric mixer with a paddle attachment combine the flour, sugar, cinnamon, and salt. Cut the butter into small chunks and add to the flour mix. Bat on med-low speed until the flour and butter cream small balls, yes balls! Once the texture is crumbly balls and the vanilla and water. Your dough will form.
Preheat the oven to 425 degrees while you prepare the filling.
Berry Filling
1 cup mixed frozen berries
1 teaspoon freshly chopped mint
1 tablespoon sugar
2 tablespoons all purpose flour
10-15 lollipop sticks
Mix these ingredients together. You will need about a teaspoon per pie.
Egg Wash
1 egg
1 tablespoon water
Mix this together and set aside with a pastry brush.
Roll out your dough about 1/4 inch thick. You can free style cut or use a cookie cutter. I used a 2 inch heart-shaped cookie cutter. This size fit well on my 5 inch wooden sticks. you will need to cut pieces per pop. Take a heart (or whatever shape you choose) and brush with egg-wash. Place your stick in the middle of the shape. Put a dollop of filling on top of the stick. The filing should just sit in the middle, there should be room on the sides. Take another heart and lay it over the filling matching it to the bottom heart. seal the edges all around with a fork. Brush with egg wash and cut two small slits on top to vent. Bake for about 20-25 minutes. They will be a light golden brown. Your kitchen will smell amazing, which is a good indicator they are done or close to it.
You can really use any pie recipe and just follow the pop method. They are super fun and convenient. Perfect for BBQs and dance parties. Real talk!
