Do you ever go on a diet and hit a plateau at the last 5 lbs, and it stresses you out so much you want to eat pizza? It’s a catch twenty-two that I have been circling my entire dieting life. I eat when I’m stressed, sad, angry, happy, excited, tired. All feelings get fed. I don’t discriminate, I regulate ever shade (Biggie Smalls said it best). I love pizza like every other human, but it’s not going o help me break my stubborn plateau, so I opted for an improvised version of my favorite indulgence: Pizza Mushrooms. Don’t get me wrong this does not hug you and shower your mouth with love in the satisfying way that pizza does, BUT it does taste like pizza toppings and compliments your waist line. So go ahead, eat those feelings without the guilt!
Pizza Mushrooms
Mushrooms (I used crimini), stems removed
Pizza sauce
Fresh basil
Cheese (I used Gruyere)
This recipe is vague because you can make as many or as little as you want, and choose whatever toppings you like.
Preheat your oven to 425 degrees. Clean and remove the stems from your mushrooms. Place them cavity upwards on a baking sheet lined with foil, sprayed with cooking spray. Fill with basil, enough that fits inside without sticking out. Cover the basil with pizza sauce, don’t let it spill out. Bake for twenty minutes and remove from oven to top with sprinkles of cheese. Place back in the oven for two minutes. BOOM! They let them cool before you enjoy.
