St. Patrick’s Day Pizza Pie

I know, I know, how could I merge two countries with so much hate? Well I am all about unity and I will put anything on a pizza! I wanted to create something traditionally different this St. Patrick’s day, so I thought I would put all the Irish fixings into my favorite pie! The end result is savory goodness. Don’t take my word for it, try this recipe for yourself.

You will need:

3 carrots
1 yellow onion
1 small head of cabbage (I only used 3 leaves)
4 small red potatoes
1 lb cooked corned beef
1 bundle sage
2 tablespoons unsalted butter
1 tablespoon olive oil
1 12oz bottle of Guinness beer
1 16 in. premade pizza dough, or 4 6 in. minis
1 cup shredded low moisture mozzarella cheese
Seasonings: garlic salt, salt, and pepper

Preheat your oven to 350 degrees. Wash the potatoes, peel them partially (I like a little skin), and cut very thin round slices. toss them in a bowl with a tablespoon of olive oil and a sprinkle of salt and pepper. Once completely coated spread them out in a baking sheet lined with parchment paper. Bake for 12 minutes. They should be slightly tender.

Slice the onion into very fine rings. In a medium sized saucepan melt 2 tablespoons of butter and another handful of fresh sage leaves. Add the onions and stir constantly over medium high heat until the inions are transparent and golden brown.

In a small saucepan simmer slices of your cooked corned beef with the bottle of Guinness. Simmer over medium low heat for 10minutes. Drain the beer and set aside.

Wash the cabbage and carrots. Chop them into pieces, about an inch in size and place them in a medium pot of boiling water with a small handful of fresh sage leaves. Allow the vegetables to boil until very soft. Once they are boiled drain and add to a food processor to blend into a sauce consistency. Add a pinch of garlic salt and pepper to taste. I made the mistake of adding too much garlic. You don’t want the garlic to overpower the other flavors.

Now for the fun part! Preheat your oven to 425 degrees. Spread a layer of the yummy veggie sauce over the crust, followed by a light layer of cheese. Add the potatoes, onions, and corned beef, then top with just a sprinkle more of cheese. Bake for 15 minutes. You can smell the luck of the Irish seeping out of your oven!
