That Monday Muff

I may be one of the few that actually looks forward to Mondays. It’s the beginning of a new week, which means, new recipes, new workouts, new encounters, new sexy! If you hate Mondays, try starting it off with these babies!

Vegan Pumpkin Apple Muffins

Cook the apples:

3 large apples, diced (I used Honey Crisp)
2 Tablespoons vegan butter
2 Tablespoons brown sugar

Peal, core, and dice the apples. In a saucepan over medium-high heat saute the apples in the sugar and vegan butter, until the apples are tender. Remove from heat, and allow to cool while you prepare the batter.

Muffin Batter:

1/4 cup pumpkin puree.
1/4 cup apple cider vinegar
2 teaspoons vanilla extract
1 cup brown sugar
1/4 teaspoon salt
2 teaspoons baking soda
1 teaspoon pumpkin pie spice
2 1/4 cups flour

Preheat your oven to 350 degrees. Beat all ingredients together until smooth. Stir in the apples. Place batter in muffin tins and bake for 20 minutes. Prepare your crumb topping while these are baking.

Crumb Topping:

2 Tablespoons vegan butter
1/2 cup flour
1/2 cup brown sugar

Beat ingredients in a bowl until small pea sized lumps form. Use your hands to mold dough crumbs. After 20 Minutes pull the muffins out of the oven and sprinkle with the crumb topping. Cook for another 5 to 10 minutes, or until crumbs are lightly browned and the center of the cupcakes are fully cooked (toothpick test).
