Last night I went out to dinner with a good girlfriend and her father. It was my first time meeting him so naturally I wanted to make a good impression. This chocolate chip banana bread did all the talking. I recommend this recipe to anyone meeting the parents of your significant other. It is sweet, thoughtful, wholesome, and exudes innocence even if you are not 😉
In-Law Pleaser (Chocolate Chip Banana Bread)
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
¼ teaspoon salt
½ teaspoon cinnamon
1 teaspoon vanilla
½ cup butter
¾ cup brown sugar
2 eggs, beaten
5-6 mashed overripe bananas
1 cup chocolate chips
Preheat oven to 350.
In a large size bowl beat the butter, sugar, vanilla, and bananas. In a separate bowl mix the flour, baking soda, baking powder, salt, and cinnamon. Mix the dry ingredients into the wet mixture just until combined. Do not over beat! Blend just enough to moisten! Stir in the chocolate chips. Pour into a greased and floured loaf pan, and bake for 50 to 70 minutes. Serve warm and pat yourself on the back for getting the parents approval!
